Gelatin is graded and soldby its Bloom Value.

This bloom value is a measurement of the strength ofa gel formed by a 6.67% solution of the gelatin, that has been kept in aconstant temperature bath at 10 degrees centigrade for 17 hours.


Each gelatin is also tested for itsviscosity at this same 6 and 2/3 % concentration. A standard viscosity range isassociated with each bloom level gelatin. Various other analysis are performedon the Gelatin to insure its purity. Among these other tests aremicro-biological evaluation, inorganic ash, clarity, moisture content and heavymetal content.

1) Gel-strength (6.67%, 10C, 17h): 220+/-5 Bloom

2) Viscosity  (17.5%, 40C):  10--12

3) Grading 6-80 mesh sieve ASTM

4) pH value: 5.5---7.0

5) Ash content: ≤1.2%

6) Moisture: ≤12%

7) Clarity (5%): 250mm

8) Smell and taste: typical, free fromdisagreeable tastes and odors (no foul odor and taste, no peculiar odor and taste.
